Fal Native Oysters

Our native oysters are sourced from the Fal River by licensed Cornish fishermen seasonally to preserve stocks. The harvest season is limited to the winter months of October to March to protect the stock when it is spawning, ensuring supplies for the generations, with natives available from us between September and late April due to our own surplus from the previous season.

With powered machinery banned in the fishery, oyster sailboats can be seen leaving Mylor harbour each day during the season and returning laden with their precious harvest.

The provenance of Fal Native Oysters means their price is slightly higher than Pacific oysters, but worth every penny.

Fal natives are graded by weight and sold individually:

*A size we choose not to sell. If we receive this size, we grade these oysters out and place back into the fishery to grow and spawn for another season affording an opportunity for the fishery to sustain itself

Cornish Shellfish Mussels

A staple of any shellfish offering and sourced from licensed fishermen our mussels are available year-round and come in two different sizes depending on location of harvest.

Mussels are sold by the kilogram and packed in nets of 1, 2, and 5kg

50 to 80 mussels per kg
70 to 100 mussels per kg – these are often gnarled with barnacles, but a favourite with discerning chefs with the time to prepare.

Palourde Clams – Ruditapes philippinarium

A petite clam with a unique flavour and distinctive patterned shell. Our Palourde clams are actually farmed and sourced from licensed fishermen in tightly controlled grounds which during the winter months limits fishing to hand-raking making their availability limited.

Clams are sold by the kg and packed in nets of 1, 2 or 3kg

Brown Crab- Cancer pagurus

Harvested from both inshore and offshore waters to provide year-round availability, our crabs always meet the local crab size byelaws and range in weight from 600grams to 2Kg and above. Sold by the Kg they are a logical extension to our range.

Pacific or “Rock” Oysters

A non-native oyster introduced decades ago to supplement the native oyster supplies, we sell both farmed and wild Pacific oysters. Sometimes known as rock oysters because their shape is gnarled when compared to the native or flat oyster, we supply a range of sizes from 60g to 1Kg+. Our farmed Pacifics are smaller in size and weight when compared to the wild but both equally delicious and meaty.

King Scallops

The shy member of our shellfish offering but one that is a firm favourite. At Cornish Shellfish we offer scallops harvested by two different methods – hand dived and lantern farmed. Scallops from both harvest methods yield excellent meat perfect for any table.

The hand-dived scallops are limited in supply by weather and localised abundance whilst the farmed provide year-round supplies. These include the world-famous Virgin Scallop which is sweeter and favoured by Michelin-starred chefs in Scandinavia.

European Lobster – Homarus gammarus

The ultimate purchase for the ‘shellfishionado’, our lobsters are caught in Cornish waters and like the crab are caught in both inshore and offshore waters with the aim of year-round availability. Our lobsters are sold by the kg ranging from 700grams to a healthy 2kg

Other Shellfish

We also sell a variety of other shellfish. These are available by pre-order during the season although we do occasionally have them in stock. This includes Mylor prawns, spider crabs, razor clams and crawfish.
